Hi everyone! I hope you all had a wonderful weekend! It was gorgeous out here and of course I wake up to a rainy Monday morning. Boo!
This weekend on Saturday I did a 10 mile bike ride followed by a short run and Sunday I did a 3.5 mile run. It was another brutal run- getting used to the heat and humidity hasn’t been a fun transition. I also ran practically right over a snake that was lurking on the side of the road in the shade! EEK!
This weekend I was also feeling very motivated to try a few recipes that have healthy twists! I’ve been hearing all about protein pancakes and so on Saturday morning I searched for a recipe to try.
I stumbled upon this one from Powercakes, I just basically halfed the recipe to make my own personal pancake and nixed the cocoa cause I didn’t have any. I thankfully had the things around the house like oat bran which was surprisingly delicious in a pancake!
This is how it turned out:
I used some agave nectar as the syrup and ate up! I put a little extra vanilla in the recipe so it was pretty flavorful. Sometime I would definitely make the full recipe and then save it for a quick breakfast in the morning.
Yesterday I was feeling pretty snack-ish and I have heard good things about oat energy bites and went on a search of Pinterest to find a good recipe to try.
Oh and it was found!
I found a peanut butter-chocolate chip-coconut energy bites and they are absolutely delicious! Thats pretty much my favorite foods all rolled up into one!
- 1/2 C nut butter(almond butter, peanut butter, sunflower seed butter or any other nut or seed butter. Anything will work here)
- 1/3 C honey(I believe brown rice syrup would also work. I’m not sure of thinner sweeteners such as maple syrup and agave though as they may not hold together as well)
- 1 C old fashioned rolled oats(you can toast for a nuttier flavor at 350 degrees for about 10 minutes)
- 1 C shredded unsweetened coconut(you can substitute any dry ingredients for this, wheat bran or germ, oat bran, some ground flax seed(I wouldn’t recommending using an entire cup!), any kind of ground nuts or seeds. For a cookie dough type bite try adding a few tablespoon of your favorite whole grain flour)
- 1-2 tsp vanilla
- pinch of sea salt if using a natural nut butter with no added salt
- 1-2 tsp your favorite spices or spice combinations(optional)
- 1/2 C other addins(any kind of whole or roughly chopped nuts or seeds, dried fruit, good quality chocolate chips, etc)
I used chocolate chips, almonds, and sunflower seeds as my extra add-ins which was absolutely perfect! oh and little extra vanilla! 😉
Let me tell you these are very sticky so I did even up adding in a little wheat flour to help them roll and stick together better, which definitely helped and gave them a little more of a “dough=y” taste. Yum
I used a natural peanut butter which is perfect for baking because I don’t like it so much on it’s own, but you definitely can’t tell with these. Even if you’re not a huge coconut fan The flavor isn’t too strong and you probably wouldn’t notice.
The finished product:
I popped these babies in the freezer and now they’re a perfect on the go snack! yum 🙂 I think I’ll try the chocolate ones sometime this week too!
Anyone have else have some healthified recipes? I swear these kinda give me that cookie fix but in a healthy way! Ever ran into some interesting wild life while running or exercising outside?
