I love oatmeal- do you love oatmeal? It is probably one of my most favorite breakfast. So as I was exploring around different blogs..I saw one of my favorites Peanut Butter Fingers had a recipe listed originally from The Fresh Market . Wow is all I can say. My life just got so much better with baked oatmeal in it. And good news is that it’s also something that you can make and then keep reheating it for a week for a quick breakfast! Say what!? Best. News. Ever.
So anyways. You should try this. NOW. Seriously, you won’t regret it! Promise! (Also, PS I made one batch using frozen strawberries, and then I was feeling chocolatey and added chocolate chips to the other..GENIUS!)
So, what you need:
- 2 1/2 c. regular rolled oats
- 1/2 c. steel cut oats
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 2 c. milk
- 1 egg, beaten (I actually didn’t even use an egg- ah well- turned out fine)
- 1/3 c. applesauce
- 1/4 c. oil
- 1/4 c. honey
- 1/4 c. brown sugar
- 2 c. fresh or frozen strawberries or chocolate chips
Preheat oven to 400 degrees. Mix together rolled oats, steel cut oats, baking powder, salt, cinnamon in large bowl and set aside. In another bowl mix together milk, egg, applesauce, oil, honey, and brown sugar. Pour this liquid mixture on the dry mixture and stir together. Pour into a casserole pan and bake for 20 minutes. After the 20 minutes take the pan out and mix in your strawberries or chocolate chips and bake for another 15 minutes or til desired consistency/browning. Voila! And Now enjoy a wonderful breakfast, lunch, or dinner (or all 3). YUM!
